Ground beef (on the verge of going bad) and ground pork. No onion, so I diced a redskin potato thinking, some use pieces of bread, some use onion, nice compromise. Found a package of forgotten cilantro, gone dry in the fridge. Added some of that (crumbled), put the rest in an empty but unwashed tall skinny little olive jar I'd previously used for ground dried peppers. Peeled and minced a garlic clove. Eviscerated a yellowing jalapeño and minced that, after carefully removing seeds & ribs. Dehydrated onion. Powdered sage. Sea salt.

2 eggs. Italian-style breadcrumbs. A cube of butter. Much blending, by hand, with a slotted spoon (my favourite short flat stainless steel spatula having gone missing).

For the glaze? The juice of one lime (hard and going brown) strained through a fork, and some cumen, with a base of Heinz ketchup and a dollup of Grey Poupon.

Result? Best damned meatloaf I ever had.

Selbst gebacken? Sieht gut aus.
